Our Trout
We source our trout from Arthur at ChalkStream in Hampshire. Arthur farms our land-based trout using the gin clear waters of the rivers Test and Itchen. The rainbow trout are reared over two years and are RSPCA assured. ChalkStream are industry leading and supply some the UKs best restaurants.

ChalkStream Trout
Our ChalkStream Trout is reared by redirecting waters of the Test and Itchen rivers into land-based raceways. True chalk stream rivers are fed almost exclusively by springs rising from chalk downland, creating nutrient-rich water and a verdant and unique habitat for trout – this is the water that flows through ChalkStream’s farm and produces a beautiful trout.

Arthur and the team have the only farms in this spectacular area, built on the sites of old water mills with the powerful current of the river flowing through their custom designed raceways, tanks and outlet streams. Water passes through the farm and re-enters the river in a favourable condition, helping to maintain ChalkStream’s status as a ‘Global G.A.P’ (Good Agricultural Practice) as well as the rivers’ credentials for clarity and good ecological status.
