We source our Trout from ChalkStream in Hampshire. Highly accoladed and praised by Michelin-starred chefs, ChalkStream rear their trout in the gin-clear chalk stream waters unique to the South of England, rich in minerals and nutrients. This gives the fish their characteristic clean taste, often showcased as a highly sustainable alternative to salmon.
