This has been infused with wild herbs handpicked from the Somerset Countryside. As the joint roasts, it produces a delicious aroma, and because the flavour is in the fat, this bastes right through the roast beef.

At Field & Flower, we strive to bring you the best of British beef. To us, this means sourcing heritage and native breeds, reared in traditional, extensive farming systems from a network of the best independent farmers in England. All of this takes time, and our beef is allowed to grow slower for longer, spending at least two seasons at grass and fed a natural diet.

This is a raw product that must be cooked. Store below 4°C. Once opened consume within 2 days.

1. Sear the seasoned rump roast in a hot frying pan on all sides until well browned (about 2–3 minutes per side).​
2. Transfer to a roasting tin and roast at 220°C (fan 200°C) for 20 minutes to develop a rich crust.​
3. Then, reduce the oven temperature to 180°C (fan 160°C) and continue roasting.​
4. Calculate the total roasting time based on your roast’s weight and desired doneness:

Rare: 1 hour
Medium: 1 hour 15 minutes
Well done: 1 hour 30 minutes

5. Once the desired doneness is reached, remove from the oven, loosely cover with foil, and rest for 20 minutes to allow the juices to redistribute.​
6. Carve into slices. The meat should be tender and juicy, with a warm pink center if cooked medium-rare.​
