Rich and tender when cooked low and slow, our Traditional Mutton Shoulder has a bolder flavour than lamb, making for a delicious centrepiece this Easter. Slow braise with white wine, aromatic herbs and root vegetables before serving with crushed new potatoes and fresh mint to garnish.


Grown in accordance with the seasons, our lamb and mutton is some of the best you can buy. We source from farmers with extensive, grass-based systems, ensuring our sheep spend at least one season at grass to fully mature.

This is a raw product that must be cooked. Store below 4°C. Once opened, consume within 2 days.
Cooking times may vary depending on your oven.

1. Let meat sit at room temperature for 1 hour.
2. Rub with olive oil, salt, pepper, garlic & rosemary.
3. Sear in hot pan (3–4 mins per side).
4. Roast at 200°C fan / 220°C / gas mark 7 for 20 minutes.
5. Lower to 140°C fan / 160°C / gas mark 3. Continue roasting, tightly covered with foil, for 2 hours (soft and sliceable) or 3 hours 30 minutes to 4 hours 30 minutes (pull-apart), testing with a fork.
6. Rest, covered, for 30 minutes.
7. Carve or shred. The meat should be deep, savoury, and meltingly tender.

This was possibly the best meat we have eaten during Christmas and up has been up against some very high competetion. Truly amazing.
