This lovely short biscuit is made by the Artisan Biscuit Company, made by hand and checked by eye, the way they have done for decades. They are based in the Peak District, and started out more than 100 years ago. Though the business has changed, the way they make biscuits is hardly any different now, using the same bronze rollers and biscuit molds that they have for decades. They use butter, non-hydrogenated oils or extra virgin olive oil in their recipes and never use artificial additives or preservatives.
