Real Food. Real Farming.

Field & Flower has been built on the principle of connecting farming communities to people who care, and we will continue to do so through times of plenty and times of scarcity. We believe that there will always be a community of people in the UK that understands the intrinsic cultural, emotional and nutritional need for real farming, and the real food that it provides for us.

To us, both real food and real farming need recognising, protecting and celebrating as a fundamental part of our lives and our culture. We’ve woken up from the post-war ‘green revolution’ with less biodiversity, global commodity markets overriding local agricultural infrastructure, and animals facing worsening welfare conditions. This is the result of a lot of farmers facing little other option but to industrialise and intensify or implode. Our farming communities are on the precipice.

Real farming is the farming that we recognise from before the scaling up and industrialising of our countryside, where conservation and regeneration have an equal footing with efficiency and scale. We define regenerative agriculture as a method of farming that improves the resources it uses, rather than destroying or depleting them.

At Field & Flower, our food system is made up of a patchwork of farming methods and routines that all abide by these regenerative, real farming principles. Hill farmers of sheep in Somerset and Devon are using rare breeds to regenerate wetlands, while replanting hedgerows to rebuild natural corridors and habitats. Salmon farmers in Scandinavia are replenishing the seas with cleaner water than they take out, while safeguarding wild salmon populations from genetic pollution. Rare breed beef farmers in Yorkshire are using grazing to reduce scrub and broaden grasslands and wetlands for nesting migratory birds, and turkey and chicken farmers are slowing down the growth of birds, letting them pluck, preen and exhibit their natural behaviours, while giving back to their local communities through education and charity. By buying what we sell, you are making an investment in a farming system that works for everyone involved.

Real farming produces real food, which doesn’t need much done to it to effectively nourish you. Our butchers, bakers, curers and makers work traditionally, scaling up the same culinary principles that you would use at home to provide food that tastes like it should, like it used to, without needing to enhance it. We say that the biggest enhancement our meat receives is time, with which it softens, enriches and develops in salt chambers and maturation rooms. Slow, traditional, free range farming methods give animals the time and space to properly mature, lay down fat and build muscle naturally. When it comes to cooking, all of this work is in evidence with meat that adds layers of complex flavour – the nutty sweet taste of dry-aged beef, the rich, savoury gravy from a roasted free-range chicken, or the delicate, slightly floral note to the grilled fat on a good free range pork chop. Real food is food that has been produced well, with care, and is unashamedly delicious because of that. Outside of flavour, when sourced from real slow farming systems, meat is packed with even more collagen, beta-carotene and nourishment than its industrialised counterparts.

We will never compromise on producing this fundamentally better food, and so much of the pleasure of what we do is in going out and finding producers making just that and introducing them to you. The greatest achievement of Field & Flower is establishing and maintaining this food system that works, prioritising animal welfare, while so many others are fracturing or falling away. It is built on the relationships we build with farming communities, the stories we can tell from them and the quality of the food that they produce. We will continue to source real food, showing off the world class strengths of British free-range farming, and producing the best meat you can buy.
