We source two types of farmed trout from two world-leading systems, from both fresh and saltwater, swimming against different types of current at different ends of Britain. This variation lets us show off the breadth of what British fish farming is capable of. Arthur farms our ChalkStream trout in the gin clear waters of the rivers Test and Itchen in Hampshire, producing a gorgeous rainbow trout in this verdant and unique habitat. Far further north, Andy and Cate farm MòR Atlantic Trout in the fierce Atlantic currents off the West Coast of Scotland, around the Corryvreckan whirlpool, no less. Both are industry leading and have welfare at the core of their practice, and the diversity of the fish produced means we can offer different cuts and sizes to suit different dishes through the year.
