As good a vegetarian centrepiece as part of a full Christmas spread, our butternut squash, mushroom and Somerset Cheddar wellington is a showstopper in its own right. Made with flaky pastry, seasonal autumnal vegetables and melting chunks of farmhouse cheddar from Barber's, the oldest surviving cheddar maker in the world, we hope you enjoy this wellington as much as we do. We deliver our Wellingtons previously frozen to ensure the delicate pastry arrives perfectly intact. Product is ready to cook after one night in the fridge. Cooking instructions: 1. Allow the Wellington to come to room temperature before cooking. 2. Preheat your oven to 210°C fan and place an empty baking tray in the oven to heat. 3. Brush the pastry with a whisked egg yolk and place the Wellington onto a piece of greaseproof on the tray. Cook for 25-30 minutes until the pastry is golden all over (the lowest rack of the oven will produce the best results) and rest for 10 minutes before slicing. This product is only available for delivery on our Christmas delivery dates (Mon 19 Dec, Tue 20 Dec, Wed 21 Dec, Thu 22 Dec, Fri 23 Dec, Sat 24 Dec).
