Our Beef Wellington is the perfect centrepiece; combining melt in the mouth beef fillet with a rich and earthy mushroom duxelles and free-range chicken liver parfait encased in a glorious blanket of all butter pastry. Roast in the oven until golden and enjoy with goose fat potatoes and greens.

All of this takes time, and our beef is allowed to grow slower for longer, spending at least two seasons at grass and fed on a natural diet.

COOKING:

Cooking times may vary depending on your oven.

  1. Preheat your oven to 180°C/160°C fan/gas mark 4.
  2. Eggwash your pastry for a golden finish.
  3. Place your Beef Wellington onto a lined baking tray and cook for 30-35 minutes for medium rare. Add an additional 10-15 minutes for well done. Use a meat thermometer to check the core cooking temperature.
  4. Rest your meat on a wire rack. You should rest your meat for 20-30 minutes after cooking, this resting time is crucial for retaining the moisture in the beef and protecting your pastry.
