Our free range gammon is ideal for making a gorgeous ham to slice and eat as a centrepiece or day to day. This joint is expertly dry cured - a gentler curing process creating a delicate salty sweet flavour. Follow our cooking instructions for either roasting or boiling to make the perfect ham every time.


Our bacon and gammon is traditionally dry cured in order to gently preserve the meat, without the need to speed up the process. Our curers say that the secret ingredient is time. The pork that we cure is sourced from passionate pig farmers in England, where the pigs are slowly reared on a natural diet. They are truly free-range meaning they are born and reared in fields all year around with straw bedded huts for shelter. This contributes to pork with great texture and incredible depth of flavour and supports our free-range pork industry.

This is a raw product that must be cooked. Store below 5°C.
Roasted Ham:
Soak time: 8hrs per kg | Roast time: 1hr per kg

1. Remove gammon from packaging and place in a large pan of cold water to soak for the calculated time. Change the water every 4 hours.
2. Preheat your oven to 180°C/170°C Fan/gas mark 3.
3. Remove gammon from the pot and wrap in two layers of tin foil, skin side facing up. Place on a trivet in a deep roasting tray.
4. Boil a whole kettle of water, place tray in the centre of your preheated oven and carefully pour the kettle of water into the tray.
5. Roast for calculated time and remove to rest.
6. Remove joint from the tin foil and remove the strings. carefully remove the rind, being careful not to remove the fat.
7. At this point the ham can be eaten and enjoyed hot or cold.


Boiled Ham:
Soak time: 20min per kg | Boil time: 50min per kg

1. Remove gammon from packaging and place in a large pan of cold water to soak for the calculated time. Change the water halfway through.
2. Discard water and boil a large pot of fresh water and cook the gammon for the calculated time with your choice of aromats (onion, peppercorns and bay leaves work well).
3. When the pot is at a boil, reduce the heat, put the lid on and simmer for the calculated time.
4. Remove the joint to cool slightly, snip the strings of the joint and carefully remove the rind, leaving as much fat as possible on the joint.
5. At this point the ham can be eaten and enjoyed hot or cold.
