Our ChalkStream rainbow trout is slow grown over two years to produce a lean, low-fat fish. Our ChalkStream Trout is reared by redirecting waters of the Test and Itchen rivers into land-based raceways. The quality of the chalk stream water of the river Test and Itchen gives the trout a deliciously delicate flavour.


Our freshwater rainbow trout are farmed by Arthur and his team in Hampshire. Fed by chalk springs, these nutrient-rich waters create a clean, verdant habitat that gives the trout their signature delicate flavour. Farming takes place on historic mill sites using the natural current to power custom raceways, with water returned to the river in excellent condition. ChalkStream is recognised for its sustainability credentials and is highly praised by Michelin-starred chefs as a standout British alternative to salmon.
