Buying our fresh salmon centre cut is a fantastic way to eat well while being the change you want to see in food & farming. Land based farming systems have no adverse effects on the marine environment for wild fish, and don't threaten other fish populations. Until we have land-based salmon farming systems in the UK, we are supporting this gamechanging movement by buying from land-based farms in Iceland and Norway.


We proudly back sustainable, responsible land-based farming methods for our farmed fish. Chalkstream have pioneered this method with their trout in the UK, and until there is a land-farmed salmon available locally, we source from innovative land-based farms, First Water and Salmon Evolution, in Iceland and Norway. Moving salmon farming away from open-nets protects the seabed and wild fish stocks, as well as providing a safe environment for the fish to thrive in. Our standard is always welfare first, proximity second, and these fish are free of the threat of lice and infection, without the need to add pesticides or antibiotics.

This is a raw product that must be cooked. Keep refrigerated. Store between 0°C to 5°C and use within 3 days of opening and by the use by date, whichever is sooner.

1. Preheat your oven to 180°C/160°C fan/gas mark 4. Place the salmon onto a non-stick roasting tray and season.
2. Roast for 20-25 minutes, or until the flesh flakes easily and loses its translucent appearance. Once cooked and ready to serve, cut the salmon into even slices.
3. Whilst your salmon is cooking, prepare some quick-pickled red onion by tossing the sliced onion in the lime juice and seasoning.
4. Mix together the Greek yoghurt, capers, lemon juice and seasoning to create your caper yoghurt. Serve with the salmon, fresh dill and pickled red onion.

Excellent flavour but a little disapointed in the 'shelf life'. It was for Christmas but use by 22nd Dec meant we had to freeze rather than use fresh.
