Creamy at the edges, crumbly in the middle with a mild flavour and a soft lemony tang, this is a proper Caerphilly cheese made from cow's milk down here in the West Country. The cheese was originally sold in the Welsh market town of Caerphilly until production died out in World War 2. Fortunately for us, it was recently revived by artisan cheesemakers so we can enjoy it today.
