Cook your turkey for 20 mins per kg + 90 mins. (Cooking times may vary depending on your oven.)
1. A short while before cooking, remove the turkey from the fridge and packaging and season well with salt and pepper. Place it breast-side down on your roasting dish and let it reach room temperature.
2. Preheat your oven to 190°C / 170°C fan / gas mark 5.
3. If preferred, place an onion, apple and a handful of bay leaves inside the cavity of the turkey. Push your turkey timer into the thickest part of the breast. If you’re choosing to cook your turkey breast-side down, make sure the turkey timer has room to pop up when cooked. This is the point where you would stuff your turkey. We don’t recommend stuffing your turkey and suggest cooking your stuffing separately for a crispy finish. Approximate cooking times have been based off a turkey with no stuffing, so if added, additional cooking time must be factored in.
4. Roast your turkey, uncovered, for the calculated cooking time. 30 minutes before the time is completed, remove the turkey from the oven and very carefully turn it over. At this point, lay your bacon over the breast in a lattice, making sure you can still see the pop-up timer. Place back into the oven breast-side up to finish cooking.
5. Your turkey is cooked when your turkey timer has popped up and the meat juices run clear. Remove from the oven.
6. Once cooked, place on the kitchen side, covered loosely with foil and leave in a warm place for a minimum of 30 minutes. Don’t worry, it won’t go cold!
7. To carve, remove the pop-up timer and discard. Then remove the bacon and chop into delicious shards. If you have a whole bird, remove the legs and wings – they should only need teasing away from the bird. Next, cut large slices from the breast and serve.
