2Ingredients
- 200g butterflied sardines
- 400g chopped tomatoes
- Half a white onion, diced
- 1 tbsp olive oil
- 1 clove garlic, crushed
- 2 tsp drained capers
- Knob of butter
- Glug of red wine (optional)
- Sea salt & freshly cracked black pepper
- Your favourite bread to serve (we like sourdough)
- Fresh parsley to serve (optional)
Instructions
- Preheat the oven to 180C.
- Heat the olive oil and butter in a saucepan. Sauté the onion for 5-7 minutes until soft and translucent. Add the garlic and cook for a minute or two longer. Add the chopped tomatoes, capers, red wine (if using) and seasoning. Simmer uncovered for 20 minutes.
- Meanwhile, place the sardines on a roasting tray with a small drizzle of olive oil and seasoning. Roast in the oven for 15-20 minutes until the skin is crispy and the flesh opaque.
- Cook your toast to coincide with the sardines and sauce. Layer your toast with the tomato sauce, cooked sardines and fresh parsley, if liked.
