Finding the best sides to serve with a Beef Wellington can be hard. An impressive centrepiece with strong flavours oozing throughout the mushroom duxelles, golden flaky pastry and, of course, the West Country PGI beef, our welly really is the perfect springtime cut. So, which sides complement it best? We love to go for something colourful and packed with flavour. Our sides below are bound to make your Beef Wellington even more of a showstopper.
Honey Roasted Veg
Easter is a time full of colour, new life and eating good food, so keeping your plate bright with a good helping of honey roasted veg is always a tasty idea. We love to roast carrots, onion, pepper and parsnips in a roasting dish with a rather large drizzle of honey and a sprinkle of Dorset Sea Salt. Make sure you wait until they caramelise and have the perfect golden colour.
Roasted Sprouts with Chestnuts and Bacon
Sprouts shouldn’t just be for Christmas. If you fancy having a festive feel at your Easter supper this spring, sprouts with chestnuts and bacon are a must. Pairing beautifully with the rich beef and intense mushroom duxelles, the sprouts add a sweet, nutty, and earthy flavour to your plate.
Sautéed Asparagus
Finding the perfect side to complement such a classic cut can be hard. Cue sautéed asparagus. Simply sauté to perfection, add a sprinkle of Dorset Sea Salt and serve next to the welly. Adding a touch of green to your plate really extenuates the bright gold and pink colours of the wellington.
Carrot and Ginger Puree
If it’s a warming flavour you’re after, cook your carrots with seasoning then blend into a puree. Adding a knob of ginger will add a warming, yet punchy flavour to the mix. Simply spoon onto the plate and place the welly on top. It will be the showstopper of the season this Easter.
Bubble & Squeak
This one might seem rather random, but starchy foods pair well with a juicy beef wellington. Using up vegetables that have been previously cooked and mixing with a creamy mashed potato, then slightly frying the mix until a little crispy and golden is a match made in heaven. Sweet flavours of the humble sweet potato balance out the richness of the West Country PGI beef. Simply bake your potatoes and lather with a butter for a soft lump of goodness. Trust us on this one.

Green beans are such a versatile vegetable and cooking searing in butter and a sprinkle of Dorset Sea Salt makes a side that will complement an array of dishes – especially Beef Wellingtons.
As you can probably tell, the humble Beef Wellington can be paired with a wide variety of sides. Anything starchy, colourful or creamy tends to work, just make sure you remember the gravy!
