Our summer saviours

Meal planning in the summer is difficult. With British weather being temperamental as ever it can be hard to plan ahead. That’s why we always keep our fridge stocked with our summer saviours. These cuts are so versatile it doesn’t matter what the weather throws at you. You can enjoy them as they are in the sunshine, or pair them with some warming sides if the weather starts to turn.

1. Chicken breast wrapped in pancetta and mozzarella
These chicken breasts come prepared with all the trimmings, all you have to do is pop them in the oven and rustle up a side salad. With so many parties and events to get to in the summer, convenience is key.

2. Cod fillets
Cod’s delicate flavour makes it very versatile. We love wrapping our Cod Fillets in tin foil with a good squeeze of lemon, grated ginger and spring onions scattered on top. You can either place them on the barbecue if it’s sunny, or cook them in the oven if the weather isn’t on your side. Serve with rice and a healthy glug of soy sauce.

3. Minute steaks
Inexpensive yet delicious, our Minute Steaks make a perfect summer midweek meal. Either fry them with a little butter and garlic, or slice them up and add to a stir-fry. Or If you’re having people over try our Sharing Steak, it’s a real show stopper.

4. lamb skewers, thyme marinated
Our Lamb Skewers are beautifully tender. They come ready marinated in thyme so are ready to transfer straight to the barbecue or into the oven. They’re lovely with a salad or stuffed into pitta bread with fresh tzatziki.
