The sun is shining (sometimes), the drinks are chilling and the hay fever is here to stay – it must be summer! Nothing beats a BBQ when it comes to summer food, making memories, seeing friends and trying new ways to cook the same old BBQ cuts. To mark the start of the grilling season, here are some of our favourite BBQ trends that we expect to see more of in 2022.
Big, bold flavours
This year is all about Korean, Japanese and Vietnamese flavours. Whether you dust, marinate or glaze your cuts with tasty flavours from the East, just know you’re bang on trend with whatever you do. Typical Korean flavours include garlic, ginger and chilli, for Japanese foods look out for miso, matcha and wasabi, and when it comes to Vietnamese, it’s all about embracing the fresh flavours of basil, mint, lemongrass and coriander.
Most of our cuts can be paired with these bold flavours, but our favourites would have to be a beef brisket (particularly for punchy Korean flavours), a pork loin or a classic chicken breast. Leaner cuts of meat will be elevated by these fresh and bold BBQ flavours.
Less waste
Food waste is a hot topic and this is here to stay for BBQ season. Instead of throwing away those extra burgers or sausages, why not turn them into a leftover salad instead? But it’s not just about finishing up the last of the food. By choosing to eat less popular cuts, something that we call eating in natural proportional balance, you can help our farmers to get the most value from their animals and reduce food waste in the process. With all this in mind, we challenge you to try different cuts to really make the most of the whole animal this summer. Whether its ribs, ox tail or even cheek, try something new on the BBQ this year and let us know what you think? You never know, you might find your favourite new cut.
US style BBQ rubs
If you’ve been following us on social media, you’ll know we are bringing out some tasty new rubs in partnership with Tubby Tom’s (the king of all flavours). Becoming the King or Queen of the BBQ is a must this summer, so enhancing your cuts with a US style rub is essential. As they say in the US, everything’s bigger in Texas, so, the bigger the cut (covered in a Tubby Tom’s rub) the better. When it comes to BBQ-ing, nothing tastes as good as a deep and smoky US style rub.
Sustainable swaps
Instead of using synthetic firelighters or kerosene this BBQ season, try our natural and sustainable Wood Wool Firelighters. They’re made in England and known for their reliable long burn time – all you’ll need is wood or coal to get the BBQ started.
Veggie alternatives
This one might come as surprise to you given that we specialise in grass-fed and free-range meat, but we also believe in less but better. Plant-based alternatives are definitely on the rise and this will extend to BBQ season – traditionally a meat heavy feast. From grilled vegetable kebabs to meat substitute burgers, we’re adding in veggie alternatives that still fit our ethos of sustainably produced British food. Watch this space.
