Venison toad in the hole

Get into game with this seasonal take on a family favourite. The trick is to get the oil really hot! And no peeking before the 25 minutes is up.

Ingredients

• 6x Field & Flower wild venison & juniper sausages
• 6 rashes of Field & Flower smoked streaky bacon
• 280ml milk
• 125g plain flour
• 3 eggs
• 8 sprigs of rosemary
• Salt & freshly ground black pepper

Instructions

1. Take a large roasting/casserole dish and line the dish with a generous amount of oil. Place in oven at 220°C/Gas 7.

2. Make the batter by beating together the milk, flour and eggs. Set aside.

3. Wrap a slice of bacon round each of the sausages.

4. Remove the roasting dish from the oven, place the sausages and rosemary in the dish and then pour in the batter. Transfer back to the oven and leave to cook for 25 minutes.

5. Remove from the oven and serve.
