Venison steaks with red wine & cranberry sauce

Our venison haunch steaks are brimming with flavour and wonderfully lean – the perfect match for a buttery red wine sauce. British, seasonal and packed full of nutrition, our venison haunch steaks are delicious served alongside sweet cranberry sauce and fragrant thyme.

Ingredients

• 2 x Field & Flower Venison Haunch Steaks
• 1 tbsp olive oil
• 130ml of red wine
• 1.5 tbsp cranberry sauce
• 2 garlic cloves, one crushed and one finely sliced
• 1 sprig fresh thyme
• Small knob of butter
• Sea salt & freshly ground black pepper

Instructions

1. Remove the steaks from the packaging, pat dry and season.

2. Heat the olive oil in a heavy-based pan and fry the steaks for 3 to 4 minutes each side. Set aside to rest and cover with foil.

3. Melt the butter in the pan and fry the garlic until golden.

4. Pour in the red wine, cranberry sauce and thyme. Stir together, reduce and season to taste.

5. Pour the sauce over the steak and serve with a green salad or buttery mashed potatoes.
