Our personal favourite. Caramelised peppers, sweet red onion and spicy harissa makes for a deliciously moreish combination.

Ingredients
• Handful of leftover turkey, shredded
• 2 thick-cut slices of farmhouse bread
• ½ red pepper, sliced
• ½ red onion, sliced
• Handful of grated mozzarella
• Handful of spinach
• 1 tbsp olive oil
• Knob of butter
Instructions
1. Preheat the oven to 180C. Place the peppers and onion into a roasting tray, coat with olive oil and season. Roast for 20-30 minutes until soft.
2. Butter your bread on the side that will become the outside of the toastie.
3. Spread harissa onto one side of the bread (inside the toastie) before adding the turkey, peppers, red onion, mozzarella and spinach. 4. Heat the butter in a frying pan. Add the toastie and cook for 2-3 minutes each side until golden.
