Turkey, pesto, mozzarella & sundried tomatoes toastie

Creamy mozzarella, nutty pesto and juicy tomatoes. Need we say more.

Ingredients

• Handful of leftover turkey, shredded
• 2 slices of thick-cut farmhouse bread
• Handful of grated mozzarella
• 2 tsp pesto
• 5 sundried tomatoes
• Knob of butter

Instructions

1. Butter your bread on the side that will become the outside of the toastie.

2. Spread the pesto onto one side of the bread (inside the toastie) before adding the leftover turkey, mozzarella and sundried tomatoes.

3. Heat a knob of butter in a frying pan. Add the toastie and cook for 2-3 minutes on each side until golden and crisp.
