Our Welsh Rarebit combines cayenne pepper, English mustard and Tabasco (a triple whammy) with Worcestershire sauce. Expect a depth of flavour and irresistible creamy, tanginess thanks to Barber’s Vintage Cheddar. Regular cheese on toast just won’t cut it anymore.

Ingredients
• 190g Barber's Vintage Cheddar, grated
• 400g sourdough bread, cut into thick slices
• 100ml milk
• 1 egg, beaten
• 1/2 tsp English mustard
• 1/2 tsp cayenne pepper
• 1 tsp Worcestershire sauce
• A few drops of Tabasco (depending on how hot you like it)
• Black pepper to taste
Instructions
1. Pre-heat the grill to 200C. Place the sliced bread onto a baking tray and grill for 2 minutes, or until starting to toast. Flip and repeat on the other side.
2. Set aside a small handful of the grated cheese, then mix the remaining cheese with all the other ingredients.
3. Remove the toast from the oven and top with the cheesy mixture. Sprinkle with the reserved cheese and grill for 4-5 minutes until golden and bubbling.
