Deliciously sweet with a kick of chilli, this pineapple salsa is perfect paired with charred BBQ chicken or crispy pork belly. Make sure to use the ripest pineapple possible to make this salad really shine. Top tip: try pulling a leaf from the top of the pineapple, if it comes out easily the pineapple is ripe, if you need to use a bit of effort it’s best left for a few days.

Ingredients
• 1 small pineapple, cut into small cubes
• 1 Romano pepper, cut into small pieces
• 1 red chilli, seeds removed and cut into small pieces
• 1 tsp soft brown sugar
• 1 small bunch coriander, finely chopped
• Juice of 1 lime
• 1 tsp chilli flakes (optional)
• Sea salt to taste

1. Mix all the ingredients together, chill and serve when ready.
