The humble courgette has had a revival over recent years and this salad certainly pays homage to that. If you haven’t tried courgette on the BBQ then you must do, deliciously golden and caramelised and paired here with a tart dressing that lifts things to another level. Serve alongside our crispy pork belly – this is one you’ll be making again and again.

Ingredients
• 1 large or 2 small courgettes, cut lengthways into slices
• 1 buffalo mozzarella, torn into pieces
For the mint dressing:
• 1 small bunch of mint, finely sliced
• 1 garlic clove, minced
• Juice of 1 lemon
• 3 tbsp extra virgin olive oil
• 1 tbsp cider vinegar
• Sea salt & freshly ground black pepper
Instructions
1. Rub a little olive oil over the courgette slices before adding to a hot BBQ or griddle. Cook on one side until golden and charred, then turn over and repeat.
2. Meanwhile, add all of the dressing ingredients into a jar a shake together.
3. Place the courgettes onto a plate and top with the torn mozzarella and mint dressing.
