The turn in the weather is making us create more warming recipes than we are used to for this time of year. Shakshuka is a delicious dish made with peppers, tomatoes and onions. We added our chorizo as a twist on this warming breakfast, which smelled amazing when cooking and tasted even better!

Ingredients
• 100g Field & Flower chorizo, cut into chunks or slices
• 400g tin of cherry tomatoes
• 2 large free-range eggs
• 2 garlic cloves, crushed
• 1 tbsp tomato puree
• 1 onion, finely sliced
• 1 bell pepper, de-seeded & finely sliced
• ½ tsp chilli flakes
• ½ tsp smoked paprika
• ½ tsp ground cumin
• ½ tsp fennel seeds, crushed
• 50g feta, crumbled
• Coriander, chopped
• Olive oil
• Sea salt & freshly ground black pepper
Instructions
1. Pre-heat your oven to 180°C.
2. In a skillet over a medium heat fry the chorizo.
3. After a few minutes turn down the heat and add a little oil to the pan. Fry the onions and peppers until soft and starting to caramelise.
4. Add the spices and garlic to the pan and cook for about 1-2 minutes.
5. Pour in the tinned cherry tomatoes and tomato puree. Stir and leave to simmer until the sauce thickens, about 15 minutes. Season to taste.
6. Remove the pan from the heat. Make two wells in the sauce and carefully pour the eggs in.
7. Place the pan into your oven for about 8-12 minutes.
8. Take the pan out the oven, and top with feta and coriander.
9. Serve with toasted sourdough bread and enjoy!
