Ingredients
Pork stir-fry:
• 1 pack Field & Flower Pork Belly Pieces (350g)
• 2 tbsp vegetable oil
• 1 red bell pepper, sliced
• 1 green bell pepper, sliced
• 1 onion, sliced
• 240g pineapple chunks (fresh or canned)
• Salt and pepper, to taste
• Cooked white rice, for serving.
Sweet & sour sauce:
• 60g cup rice vinegar
• 3 tbsp honey
• 3 tbsp soy sauce
• 60g water
• 1 tbsp cornstarch
Instructions
1. In a bowl, whisk together rice vinegar, honey, soy sauce, water, and cornstarch until the mixture is well combined. Set aside.
2. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the sous vide pork belly pieces and sear them until they’re golden brown and crispy. Remove the pork from the skillet and set aside.
3. In the same skillet, add another tablespoon of vegetable oil if needed. Add the sliced red and green bell peppers, as well as the sliced onion. Stir-fry for a few minutes until the vegetables start to soften.
4. Add the pineapple chunks to the skillet and stir-fry for an additional minute. Then, return the seared pork belly pieces to the skillet.
5. Give the prepared sweet and sour sauce a quick stir and pour it over the pork and vegetables. Stir well to coat everything evenly.
6. Allow the stir-fry to simmer for a few minutes until the sauce thickens and coats the ingredients. Season with salt and pepper to taste.
7. Serve the simple sweet and sour pork stir-fry over cooked white rice. The tender pork belly combined with the naturally sweet and tangy sauce and colourful vegetables creates a delicious and satisfying meal.
