Sausage traybake with caramelised onion marmalade

Don’t you love it when there’s only one dish to wash up? Our sausage traybake with caramelised onion marmalade is a great no fuss weekday dinner. Packed with vegetables and protein, this hearty dish is sure to please the whole family this Autumn.

Ingredients

• 1 packet Field & Flower Premium Pork & Fennel Sausages
• Half jar of Tracklements Original Onion Marmalade
• 2 tbsp olive oil
• 2 carrots
• 2 parsnips
• 100g tenderstem broccoli
• 1 red onion
• Half bulb of garlic
• A few sprigs of rosemary
• Seasoning to taste

Instructions

1. Preheat the oven to 180C.

2. Peel and chop the carrots, parsnip and red onion.

3. Place the chopped vegetables in a large tray with the sausages, unpeeled whole garlic cloves and rosemary.

4. Coat the ingredients in the onion marmalade, drizzle with olive oil and season before roasting for 25 mins.

5. Add the broccoli to the tray, give everything a good mix and roast for another 10-15 mins until the sausages are cooked through and all the vegetables are tender.
