Ingredients
• 1 Field & Flower mini pork loin roasting joint
• 8 new potatoes
• ½ medium butternut squash, peel & chopped into cubes
• 1tsp fennel seeds
• 3 sprigs thyme, leaves picked
• Olive oil
• Sea salt & freshly ground black pepper
Instructions
1. Remove the pork from the fridge about 30 minutes before you plan to cook.
2. Preheat your oven to 180°C/Gas 4.
3. Place the pork in a small roasting tray, score the fat with a sharp knife/Stanley blade and rub with olive oil and salt. Roast for 50 minutes.
4. Place the potatoes and squash in a roasting tray, drizzle with olive oil, sprinkle the fennel seeds and thyme over the squash and season both with salt and freshly ground black pepper. Roast for 40 minutes.
5. Remove the pork from the oven. Cut off the crackling, increase the oven temp to 200°C/Gas 6 and roast the crackling, allowing it to crisp.
6. Cover the pork with tin foil and allow to rest for 25 minutes. Once rested carve and serve with the squash, potatoes, some sugar snap peas and apple sauce… don’t forget the crackling!
