Maple bacon pancakes

Sweet and savoury pancakes have become increasingly popular in recent years with toppings becoming more unique. Our favourite is maple syrup and crispy bacon-topped fluffy pancakes.

Ingredients

• Field & Flower Streaky Bacon
• 220g plain flour
• 2 tsp baking powder
• 1 tbsp caster sugar
• 2 large free-range eggs
• Knob of butter, melted & left to cool
• 250ml milk
• Maple syrup
• Butter or oil for frying

Instructions

1. Mix together the flour, baking powder and sugar in a bowl.

2. Make a well in the centre of the dry mixture and add the butter, eggs and milk. Stir the ingredients until they become a thick smooth batter.

3. Heat a non-stick frying pan on a medium heat, add butter or oil to cover the pan. Once hot, ladle the batter into the pan.

4. Cook until they are bubbling then flip (normally about 1-2 minutes) then cook the other side for a further minute or until golden. Repeat until all your batter has been used up.

5. While the pancakes are cooking fry (or grill) the bacon until crispy. Stack the pancakes, top with crispy bacon and drizzle with maple syrup.
