Homemade pork scratchings

A traditional pub snack with a high-welfare twist, our crispy pork scratchings couldn’t be easier to whip up. Delicious with a pinch of sea salt (although you can add whatever spice you like) and best served with a glass of your favourite lager. A real treat for those weekends when venturing to the pub is just a little too much effort.

Ingredients

• 1.5kg Field & Flower pork shoulder
• Sea salt

Instructions

1. Pre-heat the oven to 180C.

2. Remove the rind from the pork shoulder, then use a sharp knife to lightly score the rind.

3. Place the pork shoulder (rind removed) back into the fridge and save it for another recipe, leaving just the rind to make your pork scratchings.

4. Cut the rind into bite-sized squares, sprinkle with sea salt & roast in a non-stick tray for 30-45 minutes until crispy.
