Fried gnocchi with bacon, butter & spinach

Everybody loves gnocchi. These little potato dumplings can be fried and are a match made in heaven with bacon. This dish is quick, simple and easy to make, we hope you enjoy it is much as we do!

Ingredients

• 1 pack of Field & Flower bacon lardons
• 500g potato gnocchi
• 2tbsp butter
• 2 handfuls baby leaf spinach
• Chopped parsley (to garnish)
• Salt and freshly ground black pepper

Instructions

1. Add 1tbsp of butter to a frying pan and place on a high heat.

2. Add bacon lardons and cook for around 5 minutes until brown and slightly crispy. Remove from the pan.

3. Keep the bacon juices in the pan, add the remaining butter and place back on a high heat.

4. Add the gnocchi to the pan and heat through, browning the edges and getting a slight caramelisation.

5. Add the bacon lardons back to the pan, along with the spinach. Stir thoroughly until the spinach has wilted.

6. Serve with the fresh parsley and a generous seasoning of salt and freshly ground black pepper.
