Rack of lamb with parsley & garlic crust

Juicy roasted lamb rack, this recipe not only looks incredible but is bursting with herby flavours, and ready in under an hour!

Ingredients

• 2x Field & Flower racks of lamb
• 45g white bread crumbs
• 3tbsp butter
• 4 garlic cloves, diced
• Bunch of parsley, finely chopped
• Sea salt & freshly ground black pepper

Instructions

1. Preheat the oven to 220°C/Gas 7.

2. Season the lamb with salt and freshly ground black pepper. Place the racks fat side up in a roasting pan and put it in the preheated oven.

3. While the lamb is roasting, mix together the white bread crumbs, butter, garlic, parsley, salt and freshly ground black pepper.

4. After 10 minutes take the lamb out and spread the parsley and garlic mixture on the outside of the rack – try to make sure the mixture does not fall off when returning the lamb to the oven.

5. Cook for a further 10-15 minutes, then rest the lamb for 10 minutes before serving.
