This delicious fragrant lamb stew is super easy to make and a real crowd pleaser.

Ingredients
• 500g Field & Flower diced lamb
• 1 white onion, finely chopped
• 1tbsp cumin
• 1tsp paprika
• 1 red pepper, chopped
• 100g dried apricots, chopped
• 1 tin chopped tomatoes
• 3tbsp tomato puree
• 2tbsp coconut oil or butter
• Pinch of sea salt & freshly ground black pepper
Instructions
1. Mix the diced lamb with the cumin, paprika, salt and freshly ground black pepper.
2. Gently fry the onion in a pan with 1tbsp of coconut oil or butter.
3. Add red pepper to the onion along with the apricots, tomato puree and tin of tomatoes.
4. Heat 1tbsp of coconut oil or butter in another pan and brown the diced lamb mix for 1 minute.
5. Add the diced lamb into the dish and stir.
6. Simmer on low for 2 hours before serving.
