Bring a taste of Greece into your home with our lamb kofte flatbread recipe. We made our tzatziki with grated cucumber and plenty of garlic for the perfect mix of refreshment and spice. Generously drizzle over the kofte and serve in flatbreads with rocket and quick pickled radish.

Ingredients
• 1 x Field & Flower Lamb Kofte (400g)
• 4 x flatbreads
• 50g rocket
For the pickled radish:
• 1 bunch radishes, finely chopped
• 2 tbsp red wine vinegar
• 2 tbsp caster sugar
• Dill, to serve
For the tzatziki:
• ¼ cucumber, grated
• 200g Greek yogurt
• 2 tbsp extra virgin olive oil
• 2 tbsp fresh dill, chopped
• 1 tbsp lemon juice
• 1 garlic clove, crushed
• 3 cloves garlic, chopped
• Salt to taste
Instructions
1. Make the pickled radish by mixing together the vinegar and sugar. Pour the mixture over the radishes and leave to marinate for 10-15 minutes.
2. To make the tzatziki simply mix all the ingredients together in a bowl.
3. Cook your kofte on the BBQ for 5 minutes each side until cooked through.
4. Add your chopped dill to the pickled radish then assemble everything together on a bed of rocket in the flatbreads.
