Chilli roast rack of lamb

A roast for two with a difference, the chilli flakes really liven up the dish up and work perfectly with the onions which slightly caramelise when roasted.

Ingredients

• 2x Field & Flower racks of lamb
• 1tbsp chilli flakes
• 3 red onions
• 2tbsp coconut oil
• Salt and freshly ground black pepper

Instructions

1. Pre-heat your oven to 200°C/Gas 6.

2. Rub your lamb with a pinch of sea salt and chilli flakes (if you can leave this to marinate in the fridge all day... do!)

3. Skin the onions and cut them into quarters. Place the lamb and onions on a roasting tray.

4. Melt the coconut oil and drizzle it over the red onions.

5. Sprinkle the onions with a pinch of salt and freshly ground black pepper.

6. Place in the oven for 20 minutes (rare) or 25 minutes (medium rare).
