Our smoked mackerel salad with cavolo nero and apples is so quick to prepare, it’s the perfect light lunch or easy weekday dinner. This dish is packed full of goodness with a bounty of autumnal vegetables, and the mackerel is an excellent source of Omega-3 too.

Ingredients
• 200g Field & Flower Smoked Mackerel Fillets
• 1 tbsp Tracklements Strong Horseradish Cream
• 2 handfuls of cavolo nero
• 1 pouch of precooked mixed grains
• 1 Pink Lady apple (finely sliced)
• 1/2 cup of walnuts (crushed into pieces)
• 1/4 of a red cabbage
• 5 tsp apple cider vinegar
• 10 tsp olive oil
• Seasoning to taste
Instructions
1. In a jar with a lid combine the horseradish, apple cider vinegar, olive oil, a generous pinch of salt and cracked black pepper. Screw on the lid, shake the jar well to make the dressing and set aside.
2. Finely shred the cavolo nero and red cabbage and combine with the pouch of grains in a large bowl. Pour over the dressing and massage well into the salad to thoroughly coat.
3. Tumble onto your favourite platter and top with the finely sliced apple, walnut pieces and mackerel fillets.
