This recipe has got us feeling all nostalgic. We don’t know about anyone else, but sardines on toast reminds us of our childhood, running in from the garden with muddy clothes and rosy cheeks, sitting down to a slice of thickly cut toast with delicious sardines. Try our surprisingly easy-to-cook sardines and take this classic recipe to a whole new level, you won’t be disappointed!

Ingredients
• 200g butterflied sardines
• 400g chopped tomatoes
• Half a white onion, diced
• 1 tbsp olive oil
• 1 clove garlic, crushed
• 2 tsp drained capers
• Knob of butter
• Glug of red wine (optional)
• Sea salt & freshly cracked black pepper
• Your favourite bread to serve (we like sourdough)
• Fresh parsley to serve (optional)
Instructions
1. Preheat the oven to 180C.
2. Heat the olive oil and butter in a saucepan. Sauté the onion for 5-7 minutes until soft and translucent. Add the garlic and cook for a minute or two longer. Add the chopped tomatoes, capers, red wine (if using) and seasoning. Simmer uncovered for 20 minutes.
3. Meanwhile, place the sardines on a roasting tray with a small drizzle of olive oil and seasoning. Roast in the oven for 15-20 minutes until the skin is crispy and the flesh opaque.
4. Cook your toast to coincide with the sardines and sauce. Layer your toast with the tomato sauce, cooked sardines and fresh parsley, if liked.
