Salmon ceviche

We’ve paired our sustainably sourced salmon with avocado, red onion and plenty of lime to create this beautifully fresh dish. This traditional South American dish is typically made with raw fish or seafood cured in citrus juices.

Ingredients

• 2 Field & Flower salmon fillets
• 1 avocado
• ½ red onion
• 2 limes
• Coriander
• Salt and pepper

Instructions

1. Sprinkle the salmon fillets with salt and leave in the fridge for 20 mins.

2. Wash the salt off the fillets, pat dry and then dice into 1cm cubes and put into a mixing bowl.

3. Juice the limes then add the juice into the mixing bowl with the salmon, stir through and place into the fridge for 45 mins.

4. Cut the Avocado in half, de-stone and then dice.

5. Finely slice the red onion.

6. After 45 mins, remove the salmon and gently toss incorporating the rest of the ingredients.

7. Place into the desired serving bowls, sprinkle with freshly ground black pepper and garnish with coriander.
