Chermoula is a Moroccan marinade traditionally used with fish. The flavours work perfectly when matched with our cod fillets, which hold their own with this wonderfully tangy and spicy sauce.

Ingredients
• 2x Field & Flower cod fillets
• 50g coriander
• 3 garlic cloves
• 1tsp paprika
• ½tsp cumin seeds
• ½tsp coriander seeds
• ½tsp cayenne pepper
• 1 lemon, juiced
• 3tbsp extra virgin olive oil
• Sea salt & freshly ground black pepper
Instructions
1. Preheat your oven to 180°C/Gas 4.
2. Place all ingredients (except the cod) into a food processor and blitz to a pulp. Loosen with the extra virgin olive oil and lemon juice to make the Chermoula.
3. Place the cod on greaseproof paper in a baking dish. Rub half of the chermoula marinade over the fish.
4. Place the fish in the oven for 20 minutes.
5. Remove from the oven and serve with the rest of the Chermoula – perfect with new potatoes and seasonal greens.
