BBQ whole mackerel with shaved fennel, lemon & dill salad

Our fresh Whole Mackerel is delivered seasonally as one of our Catch of the Day offerings. Very early each morning our expert fishmongers, Jamie and Les, choose the freshest seasonal catches to deliver as part of our Catch of the Day boxes. If you’re lucky enough to receive Whole Mackerel, this BBQ recipe is fresh and full of flavour. You could also the grill the mackerel inside, if the weather is up to tricks.

Ingredients

• Field & Flower Whole Mackerel (available seasonally as part of our Catch of the Day)
• 2 large bulbs of fennel
• Juice of 1 lemon
• 50ml good quality olive oil
• 20g dill
• 2 tbsp toasted pine nuts
• Salt & pepper

Instructions

1. Mix the olive oil and lemon juice in a large bowl. Finely chop the dill and then add to the dressing. Season with salt and pepper and mix.

2. Very finely slice the fennel, mix with the dressing and set to one side. This is a very lemony salad so do not make it too far in advance - the acid will start to break the fennel down and it will lose its crunch.

3. Add the whole mackerel directly to the BBQ and cook for 3-5 minutes on each side. Turn the fish just once during cooking to avoid any breakages. Remove from the heat once cooked through.

4. Serve with the fennel salad and toasted pine nuts.
