BBQ hake with chorizo

This colourful dish is perfect for long, sunny evenings. Grill our sustainable Hake on the barbecue or place it in the oven – either way it tastes spectacular. There are plenty of cuts to choose from in our range of BBQ meat and fish to make this dish your own.

Ingredients

• 2x Field & Flower hake fillets
• 1 Field & Flower cooking chorizo, sliced
• 1 red onion, finely sliced into rings
• 1 yellow pepper, cored & sliced
• 1 small courgette, sliced into circles
• Black olives (optional)
• Olive oil
• Sea salt & freshly ground black pepper

Instructions

1. Light the barbecue or preheat your oven to 180°C/Gas 4.

2. Line a roasting dish with foil so it goes above the edges.

3. Fill the foil with the sliced vegetables, chorizo and olives then drizzle with oil.

4. Season the hake with sea salt & freshly ground black pepper.

5. Place the hake on top of the vegetables and chorizo, skin side up.

6. Get another piece of foil and cover the tin, sealing with the bottom piece of foil.

7. If putting on the bbq remove the foil parcel from the tin and cook for 15/20 mins. If cooking in the oven leave in the tin and cook for 20 mins.

8. Open the foil parcel and serve.
