Ingredients
• 2x Field & Flower cod fillets
• 1 orange, sliced
• 1 red onion, sliced
• 1 fennel bulb, sliced
• 2 garlic cloves, roughly chopped
• Chervil (or parsley), finely chopped
Instructions
1. Preheat your oven to 180°C/Gas 4.
2. Place the orange, red onion, fennel and garlic in a roasting dish. Drizzle with oil and season. Place in the oven for 15 minutes.
3. In the meantime, place the chervil on a plate and put the cod fillets flesh down on the herbs. Ensure an even covering over the cod.
4. Place the cod on top of the vegetables in the roasting dish and transfer back to the oven for a further 15 minutes.
5. Serve with new potatoes and a fresh salad.
