Mediterranean chicken cacciatore

This hearty chicken dish in a rich tomato sauce is a staple Italian comfort food, with Cacciatore translating to “hunter-style” in Italian. Our Mediterranean Chicken Cacciatore is a perfect weeknight dinner that only uses one pan and accessible store cupboard ingredients.

Ingredients

• 4 Field & Flower boneless chicken thighs
• 2 tbsp olive oil
• 2 red peppers (sliced)
• 1 onion (finely sliced)
• 1 tin chopped tomatoes
• 10/12 cherry tomatoes (halved)
• A handful of pitted olives
• 3 garlic cloves (minced)
• 1 small glass of white wine
• Seasoning to taste

Instructions

1. Pre heat the oven to 180C.

2. In an oven proof skillet gently fry the onion and garlic in a little olive oil until softened and starting to brown.

3. Add the pepper and fry for a further 5 minutes before adding in the wine. Allow the wine to simmer until it has reduced by half.

4. Add the chopped tomatoes, olives and cherry tomatoes to the skillet. Season the chicken skin generously and place on top of the vegetables.

5. Roast in the oven for 45-55 minutes until the chicken is golden brown and cooked through.
