Sharing sirloin steak & salsa verde

For an extravagant meal for two, our homemade salsa verde is the ideal accompaniment to our Sharing Sirloin. Full of sharp, fresh flavour it cuts through the rich marbling of our dry-aged, grass-fed beef perfectly. Best enjoyed on balmy evenings outside with a glass of wine in hand.

Ingredients

• 1 Field & Flower Sharing Sirloin Steak (800g)
• 2 garlic cloves, peeled
• 40g parsley
• 30g basil
• 20g mint
• 2 tsp capers
• 6 cornichons
• 6 anchovy fillets
• 1 tbsp Dijon mustard
• 2 tbsp red wine vinegar
• 8 tbsp extra virgin olive oil
• Seasoning

Instructions

1. First make your salsa verde. Roughly chop your herbs, add all your salsa verde ingredients to a blender and blitz until roughly combined then season to taste.

2. Preheat your BBQ.

3. Get your steak up to room temperature then season generously with salt and pepper.

4. Put your steak on the hottest part of the grill fat side first until it forms a golden crust.

5. Sear on each side for 2-3 minutes then transfer to a cool part of the BBQ and cook for 10 minutes each side.

6. Leave the steak to rest for up to 10 minutes then slice and serve with the salsa verde drizzled over the top.
