Madeleine Shaw's meatballs with chopped tomatoes

Ingredients

• 450g Field & Flower course cut beef mince
• 2 garlic cloves, crushed
• 1 can chopped tomatoes
• 1 egg
• 1 small white onion, diced
• A handful of parsley, finely chopped
• 100ml chicken stock or beef stock
• 2 fresh tomatoes, roughly chopped
• 3 tbsp butter
• Sea salt & freshly ground black pepper

Instructions

1. Preheat oven to 180°C/Gas 4.

2. Mix the onion and parsley with the meat, egg, onion, parsley, garlic, a pinch of sea salt and a good grind of fresh black pepper.

3. Mix with hands and form into meatballs. Heat the butter in a pan on a medium heat and brown the balls very slightly. Pour the leftover oil and meat sauce into a roasting tray. Add in the meatballs, pour over the stock and evenly add the can of tomatoes. Sprinkle over a pinch of salt.

4. Wedge the fresh tomatoes in-between the meatballs. Cover with foil and cook for 45 minutes, then take the foil off and continue to cook for 10 minutes.
