Ingredients
• 450g Field & Flower Beef Mince Coarse Cut
• 200g Field & Flower Bacon Lardons
• 1 carrot, finely diced
• 1 onion, finely diced
• 125ml red wine
• 400g can chopped tomatoes
• 1 tbsp tomato purée
• 1 bay leaf
• 1 tbsp olive oil
• Salt & black pepper to taste
To serve:
• 25g parsley, finely chopped
• 400g dried spaghetti
• Parmesan
Instructions
1. Heat the olive oil in a large saucepan or casserole dish. Add the bacon lardons and cook until beginning to crisp. Add the onion and carrot to the pan, then continue to cook for around 10 minutes until the vegetables are soft.
2. Once the vegetables are soft, add the mince to the pan and brown all over, mixing regularly to ensure even cooking. Add the wine and allow this to cook down for 5 minutes, or until the alcohol is sufficiently evaporated.
3. Add the tomato purée, chopped tomatoes, bay leaf and seasoning to taste, then allow the sauce to simmer with the lid on for 45-50 minutes.
4. Meanwhile, cook your pasta according to packet instructions. In the final five minutes of cooking time, check the consistency of your meat sauce, adding a little cooking water if it becomes too dry.
5. Drain your cooked pasta, check the seasoning of your meat sauce and serve together with freshly grated parmesan and chopped parsley.
