• Field & Flower Beef Wellington (1.6kg)
• 1 egg yolk
Instructions
1. Allow the Beef Wellington to come to room temperature before cooking.
2. Preheat your oven to 230°C/210°C fan/gas mark 8 and place an empty baking tray in the oven to heat.
3. Brush the pastry with a whisked egg yolk and place the Wellington onto the hot tray.
4. Cook based on the timings below (the lowest rack of the oven will produce the best results):
Rare: 36-42 mins
Medium: 44-48 mins
Well done: 51-54 mins
5. Rest for 10 minutes before slicing.
