How to cook your grass-fed beef rib:
1. Remove your beef rib from the fridge at least an hour before cooking to let it get to room temperature.
2. Preheat the oven to 220°C / gas mark 7, season well with salt and black pepper, and place in a roasting tin. Roast for 15 minutes then reduce the temperature to 170°C / gas mark 3.
3. Roast for another 15 minutes per kg for rare, 25 minutes per kg for medium, and 45 minutes per kg for well done.
