Here are 3 simple steps you should follow for the perfect pork belly roast, every time:
1. Preparation is everything
Preheat the oven to 200°C. Take your roasting joint out of the fridge and let it get to room temperature. Use a sharp knife to score the fat and rub in plenty of salt, olive oil and freshly squeezed lemon juice. This will help the skin crisp up beautifully.
2. Cook it low and slow
Place the joint in the centre of the oven (skin side up) and roast for 20 minutes before reducing the temperature to 180°C. Continue to roast for 50 minutes per 500g, or until the core temperature of the meat reaches a minimum of 75°C.
3. And rest
Once the meat is cooked through, remove the joint from the oven, lightly cover with a sheet of tin foil to keep it warm and leave it to rest for at least 20 minutes before carving.
Keep the sides simple. We suggest buttery new potatoes and fresh, seasonal greens. Don’t forget to serve with lashings of gravy and a healthy spoonful of apple sauce!
